Easy Chocolate Chip Cookies
Classic chocolate chip cookies with crispy edges and a soft, gooey center.
Ingredients
- 120g butter, softened
- 75g light brown sugar
- 75g golden caster sugar
- 1 medium egg
- 1 tsp vanilla extract
- 180g plain flour
- ½ tsp bicarbonate of soda
- 150g dark chocolate chips
- ¼ tsp salt
Preparation

Heat oven to 180°C / 160°C fan / gas 4 and line two baking sheets with parchment.

Beat the butter with both sugars until pale and fluffy, then mix in the egg and vanilla extract.

Stir in the flour, bicarbonate of soda, chocolate chips, and ¼ tsp salt until just combined.

Scoop 10 large tbsps of the mixture onto the trays, leaving enough space between each to allow for spreading.

Bake for 10-12 mins or until firm at the edges but still soft in the middle. They will harden a little as they cool.
